    Garlic or Allium sativum is a species of herbaceous vegetable plant with bulbs with a characteristic smell and taste, approximately 10cm high. Each bulb (head) is made up of 3 to 20 pods. Its leaves are narrow and pointed. Used both in cooking and for its therapeutic properties, garlic is nowadays cultivated throughout the world, especially in temperate regions and its global production is around 24 million tonnes annually. In France it is cultivated throughout the country, and more particularly in the South-East. The harvest takes place at the end of summer.


    A wild species exists, called wild garlic (Allium ursinum), whose leaves are used for the same purposes.

    Originally from Central Asia, garlic is a cultivated plant that is no longer found in the wild.


    Its first traces date back to 50 BC. It was undoubtedly brought back to the Mediterranean basin by Mongolian troops, and would be the oldest vegetable cultivated by man, who used it both for medicine and for food. The slaves responsible for building the pyramids of Egypt consumed garlic, believing that it provided them with the necessary energy. This sparked a social conflict when the workers stopped working because their garlic ration had been withdrawn. Greek athletes consumed it in large quantities for the same reasons.


    Over the centuries, different peoples, such as the Greeks, Romans, Japanese and Chinese, consumed them for their many virtues.

    Before the discoveries of Pasteur and Flemming mainly, garlic remained one of the only means of fighting epidemics. It was part of the composition of “vinegar of the 4 thieves” (with cinnamon and other plants).
